Every year when the humidity goes down, I post my recipe for Peanut Butter cookies.  I developed it over 15 years ago and it has been "borrowed" by many

Altho I used Peanut Butter, feel free to use ANY nut butter, almond, pistachio, macademia etc.  It will be wonderful

There are only 4 ingredients and no flour

Preheat oven to 350
Line 2 jelly roll pans with parchment paper or a Silpat pad

Combine
1 cup non oily peanut butter..I use chunky or fresh ground
1 cup sugar
1 egg, lightly beaten
pinch salt

You may also add a 1/2 teas cinnamon or 1 cup mini choco chipe or 1/2 cup chopped crystallized ginger

Use a small ice cream scoop or 2 tablespoons and place on cookie sheet. I do not flatten them.   Bake at 350 for 12 min...do not let brown.  Let sit on pan for 2 mind until set.  Store in tin container with paper towel or parchment paper between layers.

Makes about 36.. They are low cal, low carb and a decent source of protein
