I made chicken nuggets for my nephew who has celiac. I am sure you can
adapt it for chicken fingers.
Dip the chicken in an egg and milk mixture, then roll in a bowl of corn meal and
instant potatoe buds. (1/2 and 1/2) I then fried them in dedicated oil only
for the chicken nuggets for a few minutes. Drained and then put them on a
cookie sheet in the oven for 30 minutes at 350 F to make them crispy. Watch
to be sure they don't burn but are done on the insides.
He said they tasted like McDonalds. Hope this helps.
