The temperature sensitivity of Olive oil may have been exaggerated (perhaps by those selling Coconut Oil - which now cost more than twice as much as olive oil). It is OK for moderate temperature frying and sauteing. While you wouldn't want to deep fry in olive oil it is OK for most tasks. Best results when frying is 365 - 375 degrees which olive oil can handle.
