I don't have access to the entire article but the citation and link to an abstract follows. To summarize: celiacs that follow a g-free diet and who are in remission still differ in weight, body mass and other characteristics than those without CD, and have a "higher percentage of energy intake as fat and a lower percentage of energy as carbohydrates." The authors conclude that those on strict gluten-free diets are still subject to malnutrition unless they are careful to follow a balanced, not just gluten-free, diet.
I'm new to the diet (one month) and didn't realize that malnutrition was a risk even on a gluten-free diet.
