I came across this recipe on a box of cornstarch.
Xmas Shortbread
1/2 cup cornstarach
1/2 cup icing sugar
1/4 cup gf flour
3/4 cup butter
Sift together dry ingredients. Blend in butter. Shape into balls. If dough is too soft to handle cover and chill 30-60 minutees. Place 1/2 inch apart on ungreased cookie sheet, flatten with fork. Alternatively, roll dough to 1/4 inch, cut into shapes with cookie cutters. Decorate with cherries, colored sprinkles or nits. Bake @ 300 F oven 15-20 minutes or until edges are lightly browned. Cool on wire rack.
The gf flour I used is a blend of rice flour, potato starch, cornstarch,, soya flour and xanthan gum, that I buy locally.
I chilled the dough for about an hour. I also rolled the dough and used cookie cutters. These worked out really well.
