We have decided to stay at the Briar Rose which says they will do gluten
free. As I said before eating looks easy. I am including recommendations
from list members.

Boulderado (historic-cool & beautiful)
St Julian- best in Boulder
Jax Fish house is also located on Pearl and are very helpful in telling
Celiacs which items on their menu contain gluten. They can alter pretty
much every dish to be gluten free.
I would stay at the Boulderado located on Spruce Street, which is directly
behind Pearl Street. Although they do not cater to celiacs at the hotel,
you would be located very close to several gluten free restaurants. For
breakfast, I would recommend Foolish Craig's. You can create any omelet and
replace toast with a fruit cup. I would just bring a clean pan to be safe.
Other restaurants on Pearl include the Sunflower Cafe (GF menu), AJI (GF
menu), Hapa Sushi (request wheat free tamari), Mongolian Barbeque (they have
an allergy pan in the back and will cook your meal separately), and Chipotle
is good for a burrito bowl. There is also a coffee shop I love on Pearl
called the Laughing Goat..they have great coffees and a gluten free crumb
cake. Located on Arapahoe there is another restaurant with a GF menu..Zolo
Grill.
From The Essential Gluten-Free Restaurant Guide by Triumph Dining:

Folsom Street Coffee Co. 1795 Folsom St
Gemini Thai 1630 30th St
Laudisio Ristorante Italiano 1710 29th St (use the term allergy)
Pei Wei Asian Diner 1675 29th St
I live in Fort Collins, about 45 miles north of Boulder/Longmont area.
The Boulderado is a famous hotel right in the heart of Boulder. It's a
remarkable place within walking distance to the equally famous 16th
Street Mall. Another lovely B&B in Boulder is the Briar Rose. They
routinely prepare wheat-free/gluten-free breakfasts. Check out their
website: http://www.briarrosebb.com/breakfast.html
Lucile's is a great breakfast place in Boulder (we also have one in Fort
Collins). It's a locally owned restaurant with Cajun-inspired dishes. I
have eaten the "Cajun Breakfast" without incident as well as the
cornbread (made only with cornmeal). I also love their Rice Pudding
Porridge.
If you make it a little north of Longmont, scope out the Centerra Mall,
off 1-25 and Highway 34. Biaggi's restaurant serves fabulous Italian
gluten-free meals (including pasta!). They have a huge gluten-free
menu. Next door is P.F. Chang's, also with great gluten-free menu. If
you come further north to Fort Collins, you'll be happy to know we have
several wonderful restaurants with gluten-free dishes. My favorite
eateries include: Sri Thai, Los Tarascos (green sauce is safe, great
guacamole), Thai Pepper, Outback Steakhouse, and more.
