I have had celiac for around 20 years, and have watched our celiac 
lifestyle evolve from one in which we were constantly writing or 
calling companies about their mysterious ingredients - the modified 
food starch, the natural flavors, etc., to one in which we can be 
reasonably confident as to a product's GF status by reading a label.

My sister was recently diagnosed with celiac, and can get confused by 
some of the postings on the list. Recent summaries have included 
statements such as :

Sour cream - could contain modified food starch
Hidden Valley Dressing - ingredients comprising less than 2% of a 
product need not be on the label, or watch out for natural flavoring.

I have told my sister that if a food label does not list wheat, oats, 
barley, rye or malt (or any of those rarer grains, like spelt), she can 
eat it. I realize that any product can be cross contaminated, even 
those marked GF.

I am asking all of you to tell me of a product containing modified food 
starch or natural flavorings or
dextrin or any of the other old no-nos, that contains gluten, but no 
gluten grain whatsoever is listed on the label in any fashion. This is 
a current label I'm talking about, not from an old can of soup lurking 
in the back of a cabinet.

I wish some celiac diet info on the Internet expired and self 
destructed after a few years.
