Hey Ruth,
I have an unclear memory of us boiling syrup and pouring it on the snow to
make a maple candy. Does that sound familiar?

I've never thought about whether "fresh" is better than bottled, but I
don't think so. It is not processed any more if it is put up in jugs/cans
than it is "hot off the pan." It is always put up hot and a seal applied
to the top. Once it's opened it can get a "musty" taste if it sets too
long. If that happens just heat it to boiling and put in a glass jar and
refrigerate and it should be fine. Ruth
