Hi Listmates, I tried a new way of making biscuits and it was a hit.
Recipe:
2 cups buttermilk
4 tbsp soft - not melted butter
2 eggs
2 cups brown rice flour
1 cup corn starch
1 1/2 tsp xanthan gum
1 tsp soda
2 tsp baking powder-heaping
4 heaping tsp sugar
Beat eggs in a medium bowl.
Add 4 tbsp of soft butter and break it into small chunks with the whisk
Mix in 2 cups of buttermilk
Mix all dry ingredients together in another bowl, then add to the wet ingredients. Mix thoroughly. Using a large spoon, place biscuit sized portions in a greased bread pan. You can spray the tops with oil and smooth them if you want a more perfect looking biscuit.
This makes 10-12 biscuits. Bake approx. 15 to 20 min. Watch them closely. Remove from oven when browning on top. Open up a biscuit to test for doneness in the center. If it is still gooey, return to oven for another 5 min.
Get out the Raspberry jam!!! Make sausage gravy!! Forget the diet.
