I am now wrapping up my first reading of Taubes' book (it's going to take several more to plumb its depths) and had a couple of brief thoughts.  A devastating critique of current nutritional wisdom (are those my words or did I get them from the back of the book jacket?), Taubes' book perfectly explains half of the diet/health equation.  But, unless I just flat out missed it, little to nothing is said about foreign proteins, the other half.  In other words, excess carbs are only part of the problem.  Foreign proteins also cause "diseases of civilization."  And, agreed that getting fat can be caused by carb-induced insulin secretion.  But what about fat as a buffer for toxins and foreign proteins?

Thoughts?
