Try doing a search on "phytates" and "Cordain" and "phytates" and "Hoggan"
to find Cordain and Hoggan's take on the high levels of phytates in foods
like wheat. In addition to phytates and wheat germ agglutinin, wheat also
contains gluten. We know that gluten is toxic for celiac disease patients
and can be lethal, and we know that celiac disease is one of the most
underdiagnosed diseases in the world, so we know that wheat is unhealthy
for a significant number of people. Accumulating evidence indicates it is
also unhealthy for most or all of the rest of humanity.
Ron Hoggan is very knowledgeable on this subject.
