Since it was 14 degrees this AM here in NYC, I decided to have hot cereal for breakfast. I developed a recipe based on one in the Dr Eades LOW CARB COOKWORKRX cookbook...low carb, gf and satisfying
I can coconut milk or cream of coconut
1 cup almond meal
pinch salt
1/4 teas cinnamon
place all ingredients in a heavy pot, place over low heat and cook untl thickened...about 5 min
can be stored in frig and rehated with some milk, cream or water [depending on your carb intake and taste]
To be really decadent, top with pat of butter..could also put a spoon of peanut butter into pot to vary taste
This is extremely high protein and good for you!
