You can grate Parmesan cheese and place a layer of it in a hot skillet to
make a
frico. But it is easier to buy the ones made by Kitchen Table Bakers in
Syosset,
N.Y., and put out a plate to nibble with drinks or to serve alongside a
salad.

Barry Novick, a former hospital administrator, began making them at home,
hence the name of his company.
His All Parmesan Gourmet Wafer Crisps come in assorted flavors and are sold,
18 to a box, at
Really Cool Foods and Grace's Marketplace on the Upper East Side, for about
$6.
The wafers are somewhat delicate - there is bound to be a broken one or two
in
each box - and if you serve them with a dip, it should be one that is not
too
dense. But each has only 27 calories and, because they are made essentially
from
cheese and seasonings, they are pretty rich in calcium. They do not contain
eggs
or wheat gluten. My preferences are the aged Parmesan, rosemary, sesame,
onion-poppy and Italian herb flavors.
