Pork shoulder is one of my favorites.  It's a pretty inexpensive cut of 
meat too, probably most people don't buy it because of the fat ;-)  Slow 
cook it for several hours.  It comes out super tender and generates a lot 
of drippings.

The drippings make a great paleo gravy - no flour or cornstarch - just 
celery, onions, whatever herbs or spices you like (fresh garlic is 
great).  Reduce it in a saucepan (heat it down while stirring, add a little 
bit of water, heat it down more, and keep repeating that until you like the 
thickness).  Use the gravy for pouring over your veggies.
