Hi Everyone!

I spend many weekends cooking and freezing food so that when I come home 
from work during the week, I do not need to cook.  So today was breakfast!
Well, I think I just created a neat new breakfast item!  Just enough 
complex carbs and protein to get your day off to a great start.  

Ingredients:
12 dozen eggs
Favorite egg additives  (e.g., cheese, onions, green peppers, bacon bits, 
seasonings, etc.)
Red Potatoes (approx. 5 med +/-)

Instructions:
Wash potatoes and grate them like you would for hash browns.  Prep 2 – 12 
tin muffin pans by spraying them with olive oil.  Place enough grated 
potatoes in each muffin pan to fill about a third to half full.  Salt and 
pepper each muffin. Whip up the eggs with your favorite ingredients and 
then fill each muffin to the top with this mixture.

Bake at 350* for 25-30 minutes!
