I have been using this gf cornbread for years. I use it also as a basis for stuffing
preheat oven to 425
combine dry ingredients
1 cup cornmeal
1 cup cornstarch
3 teas baking powder
1 teas salt
combine wet ingredients
1/4 cup honey
1/4 cup veggie oil or melted butter
1 beaten egg
1 tablespoon chopped sage, optional
combine all ingredients quickly, but leave in some lumps
grease pan with solid shortening and then pour into cast iron frying pan or 9x9 cake pan
bake for about 20 to 25 min or until edges start to turn LIGHT brown.
for stuffing, bake the day before, cut into cubes and let dry out before using.
