Sounds like he's still eating something he's sensitive too.  It could  
be rice and potatoes... they body can end up intolerant to anything  
it eats frequently in large quantities (even the relatively innocuous  
non-paleo foods like rice).

You'll have to watch if he does go 100% paleo, as it's easy to drop  
into ketosis on pure paleo if you aren't making an effort to keep  
your carbohydrate intake high.  There's a big dip before your  
endurance increases when you starve your body of carbs.  But I find  
after that, it's possible to fluctate from zero to moderate carb  
intake without going through slump again.

You might be interested in the following article.  I know your son  
isn't a rat, but rats seem similar to humans in many ways.  It looks  
from the results that the body might be able to use carbohydrates for  
energy much more efficiently if the body is adjusted to burning fat  
primarily (although that is not the point of the research).  I  
wouldn't read much into it, but it's an interesting piece of research.
