There is no real drawback to getting a SLI motherboard, even if you don't 
think that you'll use the second video card slot.  At most, the second video 
card slot may be taking up space that might otherwise have been used by a 
different kind of slot (like a regular PCI card).

I do not really need SLI, but I see a couple of motherboards with good 
reviews that feature it. These are my questions.
1. If I buy such a board, can I operate with only one video card?
2. If I can use the board with one video card, are there any disadvantages 
to using this board with one care, rather than getting a board without SLI?
