I especially like the outdoors activities aspect. Can we find a lake and swim? Fish?
Ocean/fish/dig clams...
Make it a paleo vacation type thing that is primarily nature-based and I'm there.

A thought that comes to mind is is there any demand or could it be
created for a Paleo retreat for one or more weeks where only Paleo
options were on the menu? Random regular exercise including hikes,
swimming, basking in the sun <grin> and only paleo food. Cravings for
non-paleo food couldn't be satisfied and one could get past the cravings.
The Life Extension Foundations has started an annual cruse but it's much
more educational than diet oriented.
