I guess I mean by "done right" is that if the whole animal is not eaten (look at http://www.westonaprice.org/traditional_diets/native_americans.html ) including guts (...full of half-fermented, half-digested grass and herbs...) then a diet heavily focused on saturated fats without any intake of foods to compensate for grasses and herbs, followed over a prolonged period, can lead to cancer or heart disease. That's my concern...
