I did not find it easy to stay paleo in Costa Rica, but I was traveling in  a
student group and was rather limited in my ability to get food.  Be  warned
that Costa Ricans typically eat rice and beans for all three meals and  very
little meat and vegetables.  I did have some wonderful (and cheap)  ceviche
there at a seaside shack.  I also saw many fruit and vegetable  markets in the
more rural areas that appear to have great stuff if you want to  do your own
foraging ;)
Fish is available, but usually expensive in tourist-type restaurants.   I
don't think I saw any beef the whole time I was there!

Where are you going in Costa Rica?  San Jose, Atlantic beach, Pacific  beach,
or inland?  The options are very different in different areas.   But rice and
beans are eveywhere.
