The arctic peoples eat ALL of the animal (including stomach contents and areas containing/producing for instance vitamin C), that's why they can do without fruit and veggies in winter. (Not to mention the fact that you can stock up rather considerable amounts of things like leaves, berries, mushrooms and roots for later consumption even on Greenland.)
