Hi All. I caught this on tv this A.M. It is naturally gf and df. I saw it on Nigella Bites, a cooking show, this morning.

Clementine Cake
(375 degrees 1 hour, 8" springform pan grease sides and line bottom with parchment.)

4-5 unpeeled clementines (1# total)
6 eggs
1cup + 2T sugar
2 1/3 cup ground almonds (almond flour)
1 heaping teaspoon baking powder

Put unpeeled clementines in a pot with cold water to cover. Bring to boil, cook 2 hours. Drain and when cool cut in half and remove seeds. Put in processor and chop finely. Add eggs, sugar, almond flour and baking powder. Process. Turn into greased and lined pan. Bake approx 1 hour. Let cool in pan.

That is it.

Clare MA
