I would be curious as to how many studies have been done that *prove* the
opposite conclusion- i.e. that vitamin C is protective against cancer causing
nitrites? My DH, for example, is a big hot dog eater, as well as chowing down
on nitrite loaded ham, bacon, pepperoni, etc. several times weekly, and
sometimes daily. I've checked the labels and noticed that vitamin C is added to
some of these products already. I doubt companies would spend the extra money to
fortify their foods with added vitamin C without pretty substantial evidence
of efficacy.
I remember reading about this issue as long as 30 or more years ago, being
advised to always drink a glass of vitamin C rich orange juice if eating bacon
or ham for breakfast. As for myself, I discovered many years ago that
consumption of high Tyramine foods (such as these same smoked and/or preserved
meats, aged cheeses, etc.) was my quickest route to a severe migraine headache,
so I haven't eaten more than a very occasional small bite or 2 of such foods
in at least 15 years. I don't drink sugar loaded fruit juices either. And I
got breast cancer anyway. Go figger. . .
