Splenda doesn't react the way sugar does when cooked if I recall right.
Splenda is a bi-product of sugar actually though. Stevia is a natural
sweetener, also honey. I suffered from much heartburn for quite a while,
then I realized I was taking in lots of sugar as in coffee and etc. I
stopped the sugar intake, used honey in my coffee and walah! No more
heartburn hahaahah. Stevia is a sweetener that diabetics can use and it
will  not cause cavities like sugar does. However, to me it has an
unfavorable taste similar to nutri-sweet, the unhealthy sugar alternative.
But if you like diet soda and etc. you'd have no issue with it as I do.
Speaking of FDA failures, Nutri-Sweet  is so close to formaldehyde, or
phonetically pronounced, formeldahide, that small doses are produced in the
brain when ingested by humans. It is an artificial non-natural sweetener
FDA gives thumbs up, but Stevia which has been used in Europe and other
areas for literally centuries and is proven to help with blood pressure, no
tooth decay and no affects on diabetics, yet they won't allow it to be sold
as a sweetener and have tried to stop it being introduced in this country
all together. Stevia is a plant and you can get it as a ground up dried
plant or made into a liquid and sold as a supplement in health stores.
Little goes a long way.
