Kevin - the best place to start is by buying a copy of Bette
Hagman's _Gluten Free Gourmet_. It has a complete listing of
the diet, things to avoid, organizations and products that
sell gluten-free foods, in addition to recipes. (I actually
hardly ever use her recipes, but still found her book
invaluable.) Or buy the second book, _More from the Gluten
free Gourmet_ which has more up-to-date info. Both are now
in paperback for around $12...well worth it.
