I nearly always stirfry my veges, except when I make
soup/stew, and even then I usually start by sauteing
them anyhow. But I don't find it especially
boring....I usually cook my veges together with the
meat, and add different sauces or seasonings.
Last night, for instance, I sauted some ground pork,
broccoli and mushrooms, and added broth and a couple
tablespoons of pesto. For lunch I cooked spinach,
then stirred in tahini, sesame seeds, chopped ginger
and lemon juice. (Beef jerky on the side.) And
tonight I stirred green salsa into ground pork and
shredded cabbage.
I do try to vary the kinds of vegetables - even though
I mainly eat greens, it's amazing how many different
kinds there are,and they all taste different.

Ratatouille is a concept, not a recipe cast in stone.
Go easy on the tomatoes and onions, throw in lots of
celery, mushrooms, and zucchini, and it can be as
low-carb as you see fit.
Use your imagination, and you'll come up with some
exciting vegetable seasonings, I'm sure.
