I received 7 responses to my question on Wheat Fiber. All but one warned against using it. Most were concerned with cross contanination. The most comprehensive comments were the following:

- I believe it is (gluten free), because all of Metamucil's products (except cookies) are
made with wheat fiber but are gluten-free.

-I don't THINK so!!!  No way could it be kept free of contaminents.

-I wouldn't trust it.  Technically, the protein is contained inside the seed 
which is covered by the bran.  The bran is flaked off the seed & this is 
where I believe "wheat fiber" may come from.  That flaking process often 
brings traces of the seed with it that contains gluten.  I truly believe it 
would be impossible to avoid gluten contamination if you ate wheat bran or 
"wheat fiber".

That said, if the "wheat fiber" is actually from the grass or stems of the 
wheat plant & harvested before the seed forms (around six weeks) then it 
would be GF.  I would ask them for the exact source of the "wheat fiber."  
If they can not tell precisely if it's from the bran or the grass, I 
wouldn't eat it.

You can probably find a suitable alternative for that product that does not 
contain questionable ingredients.

-DON'T eat it!

As a followup,  I sent another email to Pacific Foods asking if they had tested their gravies for gluten. I have not received a response from them.  Jim
