Cell walls of the plant kingdom are made of cellulose.  Cellulose is indigestable to humans.  Cell walls are resistant to grinding(ie chewing) PH changes and osmotic pressure.  So the majority of raw plant consumption becomes poop; including the now beloved antioxidants, vitamins, minerals etc.
