Welcome, Don:
I wrap my egg, chicken or tuna salad or sandwich meats in lettuce leaves.  Spread some pesto or whatever other spreads you may like, It tastes great and refreshing as well.  Sometimes it gets messy.  Oh well.  That's when i eat paleo - with my fingers!!
