I have read that liver is also a good source of dietary copper.  Yet
another theory about the "French paradox" is that the French get more
copper, because they consume organ meats and shellfish in considerable
quantities.  "Moules frites" (fried mussels) are still a common fast
food item in France.  The idea is that copper is needed for production
of elastin, a protein essential for the maintenance of healthy arteries
and connective tissue.
