Here is some info from bob's red mill:
a) The potato flakes contain no gluten, but they are not produced in a
gluten-free area, so there is a chance of cross contamination with gluten.
b) Here is what the website www.bobsredmill.com says about their GF flours:
"Bob's Red Mill stone grinds flours in a dedicated room for the production
of its gluten-free line and performs batch testing before processing and
after packaging. The company adheres to the Codex Alimentarius standard -
the international gluten-free food standard for manufacturers. While the
current Codex gluten-free standard specifies a gluten limit of 500 parts per
million (ppm), Bob's Red Mill's gluten-free products consistently fall below
20 ppm."
c) And here is their answer to my email, asking if it was a GF room within
the regular building or a separate building entirely:
"Our Gluten Free products are produced in a separate room in the same
building as our regular products. They are batch tested in our quality
controlled laboratory. We use an ELISA Gluten Assay test to determine if a
product is gluten free."
