      Sorry for the delay in posting my summary of stores but I fell and fractured my knee cap Saturday evening.  We are still coming to Colorado - just not doing the hiking!
      
  Every email I received mentioned the following three stores that carried a good variety of gluten free products:        Whole Foods, Wild Oats, and the Vitamin Cottage.

Also a few people mentioned a gluten free bakery in Colorado Springs called "Out of the Breadbox"  (1508 Colorado Ave   phone  719-633-3434).  They have a website where I got further information.  I just called and spoke with them and have ordered 2 breads.  They also have cookies, crackers, cakes, etc that are baked on site.   The breads I ordered have some gluten free grains so there is a little fiber in the bread, too.

A new health food store in Aurora/Centennial   "Naturally Organic" (5470  S. Parker Road)  was also mentioned.  They have a large selection of gluten free food and are very educated about celiac.
