Organic Sucanat: from dehydrated fresh pressed cane sugar is lower in sucrose and has a lower glycemic response than refined sugar. Sucanat contains 35 mineral salts. One gram of Sucanat equals 15 grams of carbohydrates.

Ruby Range Pumpkin Cake Mix
3 eggs
1/4 cup butter softened
1/2 cup pumpkin + 2 tablespoons water
Ruby Range Spice Cake Mix
Preheat oven to 350. Mix butter , eggs and pumpkin + water. Stir in Ruby Range Mix. Spoon into greased 8" cake pan or 12 muffin cups.
Bake cupcakes 12 to15 minutes or cake
25 to 30 minutes.
Optional: Mix 1 cup powdered sugar, 1/4 teaspoon pumpkin pie spices, 1-2 tablespoons water, drizzle over warm cake.
Apple Crisp
Topping:
1 cup Ruby Range Pancake Mix
1/3 cup Sucanat
1/4 cup butter room temperature
1 Tablespoon toasted pine nuts or pecans
Filling:
3 cups apples or any desired fruit (frozen work well)
1/3 cup Sucanat or sugar
1 Tablespoon fresh lemon juice
1/3 teaspoon cinnamon
1/8 teaspoon nutmeg
Preheat oven to 375
Mix dry ingredients for topping. Cut in butter until in pea size pieces. Spray a baking pan with canola oil or butter the pan. But in fruit, mix rest of ingredients. Add topping. Bake for 30 minutes or until bubbling.
