Here's another thought about sweet rice four that was not mentioned. I buy it bulk as sweet brown rice. (Check with your local food coop.) Then I grind a batch and keep it in the freezer to add to recipes that call for sweet rice flour. It works very well.
I also use the sweet brown rice in dishes such as paella as it keeps its chewy texture. One could also use it in a split pea soup as a substitute for the barley.
