Would the butcher at a health food store have these?

no you will have to deal with hunters or local butcher farmer who do their
own . they are situated inside the fat around the kidney . they look like a
tiny kidney ( 1 inch for a cow . half an inch for lamb ).
i think it is illegal for plants to sale them because they might be
considered a medecine as they are very potent with their high dose of vit c
and cortisone .
 dry adrenal extracts are inactive the cortisol is removed but they might
still have some specific  building blocks for the adrenals
