... including something I had never come across before:

"Cattle and sheep and pigs were bred to be fat because people wanted
tallow for candles. Now, instead of using it for candles, we’re eating it
and although a lot of the meat that we get in shops is leaner nowadays,
the fat is trimmed off and put into junk food mostly,"
