Hi everyone,
Lots of conflicting advice on this celiac stuff today...
I also have Celiac Disease and wanted to share some info:
It does not matter what the cows/chickens/pigs/etc have eaten. You
will not react to gluten proteins that those animals ingested.
However, many processed meats contain gluten as an additive. Many deli
meats are known for this and MANY brands of pork are injected with
various things which may/may not contain gluten. Self-basting chickens
or turkeys almost always contain gluten. Restaurants often use
gluten-containing marinades for their meats.
Gluten is a hidden ingredient in more foods than you can possibly
imagine - even supposedly benign things like hand lotion (you would be
amazed at how many times a day you lick your fingers?!) and lipstick or
lipbalm. If you stick with a totally PALEO diet, you will rarely even
have to THINK about the possibility of gluten contamination, except for
the issue of cross-contamination from pots(such as cast iron) or
utensils or wooden cutting boards that were once used for gluten.
