After reading your summary, I got to thinking about my favorite pie
recipe and thought you might like it. I brought it home from Chicago from
a little German village I went to with my daughter and the pies were sold
there.  I enjoy it because it's baked in a large bag and if it boils over
it doesn't dirty the oven. Tastes great too.
Apple Pie in a Brown Bag:
About 6 Granny Smith apples peeled, cored and sliced thinly.
l cup sugar
l tsp cinnamon 1/2 tsp nutmeg
Can add l TB lemon juice, I usually don't.
2 TB of GF flour

Make your favorite crust, mix the above dry ingredients with the apple
slices and put it all inside the crust. I usually add 2 TB of butter cut
up in little pieces and scattered around the top of the apples.  Mix a
crumb topping ( the one you just got from one of your recipes would work)
I believe it's l cup of GF flour, l/2 cup brown sugar and 6 TB of
butter-Mix till crumbly and scatter on top of the pie.   Place the whole
pie inside a large brown bag and staple the open end of the bag shut with
two or three staples or use large paper clips. Place on the oven rack and
bake in a preheated 425 oven for about l hour or 55 minutes.   Split bag
open to remove the pie  being carefull of the hot steam.   It's great.

-Omelet -  There was a recipe for using apples in omelet in a New
York Times article about foods to go with beer.  I have made the
omelet and it is wonderful without any beer to drink.  All you do is
make a basic omelet, fill with sauted apples (in butter with a little
sugar) and top with goat cheese.

-Acorn Squash -  Cut the squash in half scoop out the seeds and fill
with chopped apple, nuts or raisins, mixed with some sugar, brown
sugar, or maple syrup.  Bake according to the regular instructions in
most cookbooks.  There is a main dish version with apples and cooked
ground beef--I can't locate the recipe, but it was great.

-Salads - specifically diced apple added to tuna or chicken salad.
Other Waldorf salads.  I sent you the frozen Waldorf salad from
today's Paula's Home Cooking.  Another great one is usually on the
Ocean Spray cranberry package around Thanksgiving and Christmas is
the Cranberry Apple Waldorf salad.

I think the apple pizza in your list would be fun without the apple
jelly.  I would try a thin coating/layer of goat cheese and top with

Breakfast - Apple-Almond Gratin

1 cup Diamond sliced Almonds
4 slices day-old sandwich bread, or 6 thin slices baguette, buttered on
both sides and cut into 2 inch squares
2 cups heavy cream or half and half
1 large egg
2 teaspoons vanilla
1/4 cup packed brown sugar
4 medium (Golden Delicious, Gala, Fuji, Granny Smith) apples, peeled,
cored,      and thinly sliced (about  5 cups)
1 cup dried cranberries, optional
Preheat oven to 350°. To toast almonds, spread evenly on a baking sheet
or in a shallow pan. Bake, stirring once or twice, until lightly browned
and fragrant, 5 to 10 minutes.
        Butter base and sides of a 2 1/2- or 3-quart gratin dish. In a large
bowl whisk together cream, egg, vanilla, and brown sugar. Add apples,
almonds, bread and optional cranberries toss to coat. Spread mixture as
evenly as possible into the pan.
        Bake at 350° for 1 hour, or until apples are very tender.  Serve hot,
warm or at room temperature.  Serves 4 to 6   You can view this recipe
