Hi listies,  Each year I have posted this recipe for gf matza that I came up with many years ago.  It looks and tastes very much like real matza.  I thought it would be helpful to post it again this year.  Happy Passover and I don't have any interest in the GF Pantry except that this is the mix I used.

1 cup GF Pantry French Bread mix
4 tablespoons water
1 egg

Mix all ingredients in mixer on high until dough ball forms.  Roll out dough in very thin sheets on parchment paper dusted with more mix.  Cut into squares - prick lines with fork to make it look like matza.  Bake at 440 degrees on parchment paper for 18 minutes.  Remove and cool.
