About 58% of the protein you eat is converted to glucose, via a
metabolic process called gluconeogenesis. This is an average, since the
exact percentage depends on the amino acid composition of the protein;
only certain amino acids are involved. This, incidentally, is why a
meal of just meat/fat and no carbs at all will still raise your
postprandial BG.
