Here are the comments I received:

Nothing is suitable (because of the seasonings and thickening agents they use--
even in the dessert fondues)

They coat all their cheese in wheat flour to make the cheese fondues come out
correctly. The swiss cheese fondue also has beer in it.

Some of the bouillions they use have gluten in them.

Some options are GF:
Mushroom salad -- seasonings and dressing are all made right there, very good,
and the couple I eat are gluten free - they are not creamy.

Cooking sauces are made from mostly wine and some broth.

Melting Pot in DC had a GF menu -- basically just fruit and veggies instead of
dipping bread and picking the basic dips over some of the others which have gluten.

The manager told me to call ahead and they will make whatever I want specially for
me.

Their chocolate raspberry martini's are GREAT as a dessert! :)

This list came from Corporate HQ at Melting Pot:

Gluten in Melting Pot Sauces and Products
We have been receiving questions from our guests regarding gluten in our products.
Many people have allergic reactions to gluten, which is contained in anything
prepared with wheat or wheat flour. Below is a list of menu items served at the
Melting Pot that contain Gluten or wheat flour.

Breads – French, Rye and Pumpernickel are all made from wheat flour
Cheese fondues – all of our cheeses used for fondues are blended with flour
Vegetable Bouillon – Contains Hydrolyzed Gluten
Mojo Bouillon Contains Hydrolyzed Gluten
Teriyaki Marinade (for teriyaki sirloin) - Contains Hydrolyzed Gluten
Teriyaki Glaze – Contains Hydrolyzed Gluten
Sesame Seed Batter – Contains Wheat Flour
Tempura Batter – Contains Wheat Flour
Dessert Dippers (cheesecake, brownies and pound cake) – Contain Wheat Flour

** Note that they only consider wheat to be an offending grain - not barley, rye or
oats. **

As it turns out, the Melting Pot near me isn't opening until June/July, but if I do
decide to go, I'm going to call ahead and try to speak with the manager or chef. It
sounds like the cheese fondue is out, but maybe there are others they could
suggest.

Thanks to everyone who responded.
