Hello,

I have been discussing wheat free menu possibilities with a local
restaurant owner. He owns a small Denver chain called Tokyo Joes. They
have great rice dishes, but all their sauces are made with soy sauces
that contain wheat. I am trying to convince him it would be great to
offer some of these same dishes made with wheat-free Tamari sauce as an
alternative.

Has anyone had any success with similar requests? Any suggestions on
approaches to take? I am not familiar with running a restaurant -- so
if there are any obstacles other than switching recipes, let me know.
