SUMMARY:

I had asked on 9/25 if anyone had experienced getting better when first
going GF and then later getting sicker.  I had 16 replies.

Several people suggested that I might still be getting some hidden
gluten in my diet.  Some suggested trying an elimination diet.  Some
suggested looking for allergies in what I was eating.  Several people
suggested going dairy free as well.  A few suggestions that it might be
soy or egg.  Suggestions to look at hidden ingredients in vitamins, etc.

There was a suggestion to: "Re-evaluate EVERYTHING you are consuming.
You can do this by staying off one particular food for a week, then on
chosen day, on an empty stomach, take your pluse and record it.  Eat a
small amount of the food and 30,60, 90  minutes later take your pulse
again..  Any rise above ten percent indicates an allergy.  The method
was recommended by Carlton Fredericks,the grand-danndy of American
Nutritionists and is from DR COCOA'S PULSE TEST FOR ALLERGIES book
[which is available in paperback from Amazon and B&N]."

Suggestions that it might be non-celiac related.  A suggestion that it
might be Candida Albicans.

And a suggestion from a large group of celiacs that "As your body heals,
it will react worse to any gluten.  Before being diagnosed your body was
constantly being infected with gluten, and it didn't know how to feel
without it.  Now that it is healing it is reacting more so."  And a few
others suggested the same hyper-senstivity and suggested starting a food
journal to see if I could find any patterns.

UPDATE:

I did food allergy testing and find that I am allergic to dairy, eggs,
corn, chocolate (caffiene), and a few fruits and veggies.  That seems a
bit limiting, but I am trying to figure out ways to eat only things that
I am not allergic to...wish me luck!  I am allergic to grasses and trees
and pollens, so started immune therapy shots.

I like the notion of the food diary and am working on creating a
web-based format for me to use, hosted in a blog, so I can pop online
and make entries from work and not have to carry it around with me or
rememeber everything.

Overall, it was good to hear that other people do not drop to 0 in three
months, that was what my doctor was expecting and I was concerned.
