Kathleen,
I am Celiac, too, and discovered the same thing you did: after going
gluten-free, other grains (in addition to dairy and legumes) started to
bother me (and my daughter).
She and I have gradually found ourselves eating somewhat Paleo, except we
cannot tolerate many fruits or vegetables, or nuts or berries, but we can
eat potatoes without a reaction.
I'm feeling great, but my daughter is still having some difficulties (sugar
cravings among them).
