I've come to the conclusion that it's best to avoid eating out, or
buying pre-made meals. Instead I've discovered some tasty meal ideas
I'd like to share.
Instead of following elaborate recipes for a dinner meal, I just go
with the basics:
-Yellow beans, steamed, strained and mixed with chopped green onions &
minced garlic that has been sauteed for 3 minutes in a bit of olive
oil. Salt & butter to taste.
-Broccoli, the florets, steamed, strained, and combined with
gluten-free sliced cheese & dash of salt; torn in pieces, the cheese
melts in seconds over broccoli on stovetop.
-Carrots, peeled, cut, steamed & strained, with dash of brown sugar,
gluten-free margarine or butter, & salt.
-Ground beef (0.3 kg) mixed with 3 Tbsp gf instant potato flakes, 3 Tb
gf ketchup,
1 Tb gf bold deli style or gf dijon-type mustard) & 1 egg. Shape into patties;
cook at 375 F, on parchment paper-lined baking sheet 12 minutes on each side.
-Bite-size pieces of chicken breast boiled for 3 minutes or until fully cooked.
Strain and season with your favorite gf bbq sauce or topping.
-GF canned salmon, great with fat-free gluten-free Caesar type
dressing or mayonnaise. The bones are a great source of calcium.
-Eggs scrambled with a dash of gf tomato sauce & gf cheese.
-Cucumbers and tomatoes from the garden, chopped & seasoned with a
dash of salt & gf vinegar.
-Also, plain frozen grapes or frozen blueberries (not thawed) make a
fun tasty treat.
Most of the above takes only minutes to make. I find that even if a
store-bought
ready-made meal is said to be gluten-free, I can still react to it.
It's either because
it isn't fresh enough, or some of the non-gluten ingredients or
additives don't agree with me. I've found myself at my healthiest
with just the basics- home-made food.
You know exactly what's in it; there's no second guessing.
