This is a delicious recipe with a mix of unexpected ingredients. I
adapted it from a recipe of a professional caterer I used to work for.
Proportions of the various ingredients can vary according to your taste
what's on hand.
2 bunches broccoli, washed & largest stem ends removed
1 apple, cored
1/2 cup Raw walnuts or peacans
1/2 small white onion
1/2 cup Raisins
mayonnaise
fruit juice (a tart juice like pineapple or orange is best)
Salt
In small batches, chop first three ingredients in a food processor or
chop by hand. Finely mince the onion. Stir in mayonnaise a little at a
time until all pieces are lightly coated. Then add enough juice to "cut"
the mayonnaise so it's not too thick & gooey. Salt to taste. I brought
this salad to a family gathering last evening & it was a BIG hit.
Everyone wanted the recipe.
