You're forgetting one thing. ALL foods stimulte insulin.
Beef, cheese, and fish stimulate more insulin than oats,
All-Bran, Muesli, white and brown pasta, and peanuts. We
can't explain the weight loss of low-carb or paleo diets
with reference to less insulin being produced. Far more
likely, these diets simply remove reactive (allergic or
addictive) foods.

Yes, the body also requires insulin to assimilate any
nutrients from food. This is why people lose weight
when they become diabetic or insulin resistant. Their
cells can no longer absorb much of the nutrients in
the food. This is also why you CAN'T gain weight on
nuts - they stimulate almost no insulin (about what
your body produces in a fasting state).
