I haven't listened to the interview because I'm at work, but I'm wondering
how he made that correlation. What studies does he cite? What mechanism
would nitrates play in causing diabetes? I have a tough time believing it
would be the nitrates. Rather, I would think that looking at the rest of
the diet of people who eat bacon would be more telling.
