Oh, yes! Large fat pads under the skin, especially near the vent and on the
back, as well as under the wings along the sides. As was pointed out, not a
whole lot to eat on these guys, but delicious. The limbs are lean, and are
easily overcooked when preparing whole ducks. The most delicious
traditional recipe has to be the Chinese method of spicing, hanging
overnight, steaming, and then deep fat frying. But I'll take mine rare...
